These wonderful little bites of deliciousness are called Antojitos meaning “little cravings”. Topped with a dollop of Coo Moo Jam and some Sour Cream. Yummy! Enjoy! Ingredients: 4 (12 inch) Flour Tortillas 3 ounces White Cheddar Cheese (shredded) 3 ounces Monterey Cheese (shredded) 3 ounces Cheddar Cheese (shredded) 1 Diced Tomato 1 cup Red Bell Pepper 1/3 cup Black Beans, drained 1/8 cup Chopped Green Onions 2 Tbsp Hot Salsa 1/8 tsp Chili Powder 1/8 tsp Cumin 1 tsp Coo Moo Jam 1 tsp Sour Cream (optional) | |
Directions: Preheat oven to 425 degrees F (220 degrees C). Lightly grease two 12 cup muffin pans. Cut each tortilla into 6 smaller round pieces (3 ½ – 4 inch round cutter). Insert the pieces into the muffin tin cups. Mix all ingredients in a medium size bowl. Spoon the filling into the tortilla lined muffin tins. Bake in the preheated oven for 5 to 6 minutes, or until cheeses are lightly browned and bubbly. Top with Coo Moo Jam and sour cream (optional). Enjoy!! | |
