
Apricot Habanero Glazed Salmon Lettuce Cups with Citrus Avocado Slaw

Ingredients
- 1 pound salmon fillet, skin removed and cut into 8 bite-size pieces (about 1-1.5 inch)
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt, divided
- 1/4 teaspoon freshly ground black pepper
- 1/3 cup Apricot Habanero jam (product link)
- 1 tablespoon low-sodium soy sauce
- 1 teaspoon rice vinegar
- 1 teaspoon finely grated fresh ginger
- 8 large butter lettuce leaves, washed and patted dry
- 1 ripe avocado, diced
- 1 small blood orange or navel orange, segmented and chopped (about 1/2 cup)
- 1 small carrot, julienned or shredded (about 1/3 cup)
- 2 tablespoons finely chopped red onion
- 1 tablespoon fresh lime juice
- 1 tablespoon extra-virgin olive oil
- 2 tablespoons chopped cilantro (plus extra for garnish)
- 1 tablespoon toasted sesame seeds or chopped toasted almonds for crunch
- Optional: thinly sliced fresh jalapeño for extra heat
Instructions
- Make the glaze: In a small bowl whisk together the Apricot Habanero jam, soy sauce, rice vinegar, and grated ginger until smooth. If the jam is very thick, microwave the mixture for 10-12 seconds and whisk again to loosen.
- Season the salmon pieces with 1/4 teaspoon salt and the black pepper. Heat a nonstick skillet over medium-high heat and add the olive oil. When the oil shimmers, place the salmon pieces in the pan, spacing them so they sear not steam.
- Sear salmon for about 2 minutes on the first side until a golden crust forms. Flip carefully and cook another 1.5 to 2 minutes for medium doneness. In the last 30-45 seconds of cooking, spoon half of the glaze over the salmon pieces, turning them to coat and allow the glaze to caramelize but not burn. - While salmon cooks, prepare the citrus avocado slaw. In a bowl combine the diced avocado, orange segments, carrot, and red onion. In a small jar or bowl whisk together lime juice, olive oil, remaining 1/4 teaspoon salt, and chopped cilantro. Gently toss dressing with the avocado mixture so the avocado stays creamy and coated.
- Assemble the lettuce cups: Place a butter lettuce leaf on a serving platter. Add a small spoonful of citrus avocado slaw into the base of each leaf. Top with a glazed salmon piece. Drizzle a scant teaspoon of the remaining Apricot Habanero glaze over each salmon-topped cup for a shiny finish.
