A bright, plant-forward bowl that pairs crisp pan-fried tofu with quick-pickled vegetables, warm sesame rice, and a glossy Honey I
b9m Hot glaze tossed into a peppery scallion-sesame dressing. The hot honey lends complex heat and tang so every bite is sweet, spicy, and deeply satisfying.

Ingredients

  • 1 cup short-grain rice (or sushi rice)
  • 1 1/4 cups water
  • 14 oz extra-firm tofu, drained and pressed
  • 2 tablespoons neutral oil (avocado or vegetable), plus more for frying
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon kosher salt divided
  • 2 medium carrots, julienned or shredded
  • 1 small cucumber, seeded and thinly sliced into matchsticks
  • 2 scallions, thinly sliced (white and green separated)
  • 2 cups baby spinach or mixed baby greens
  • 1 tablespoon sesame seeds, toasted
  • 1/4 cup Honey I
    b9m Hot (see creative use below)
  • Quick-pickle brine:
    • 1/2 cup rice vinegar
    • 1/4 cup water
    • 1 tablespoon sugar
    • 1/2 teaspoon kosher salt
  • Dressing:
    • 2 tablespoons soy sauce
    • 1 tablespoon toasted sesame oil
    • 1 tablespoon Honey I
      b9m Hot
    • 1 tablespoon rice vinegar
    • 1 teaspoon grated fresh ginger
    • 1 teaspoon toasted sesame seeds
    • Pinch of sugar if needed
  • Optional toppings: thinly sliced nori, kimchi, extra Honey I
    b9m Hot for drizzling

Instructions

  1. Cook the rice: Rinse the rice under cold water until the water runs clear. Combine rice, 1 1/4 cups water and a pinch of salt in a small pot. Bring to a boil, reduce to low, cover and simmer 15 minutes. Remove from heat and let rest, covered, 10 minutes. Fluff with a fork and stir in 1 teaspoon toasted sesame oil.
  2. Quick-pickle the veg: In a small bowl whisk rice vinegar, water, sugar and 1/2 teaspoon salt until dissolved. Put carrots and cucumber in a shallow bowl or jar and pour brine over. Let sit at least 15 minutes while you prepare other components.
  3. Prep and pan-fry tofu: Slice pressed tofu into 1/2-inch slabs, then into cubes or rectangles. Toss gently with 1/2 teaspoon kosher salt. Heat 2 tablespoons neutral oil in a nonstick or cast iron skillet over medium-high. Add tofu in a single layer and fry until golden brown and crisp, about 4-5 minutes per side, adding more oil if needed. Transfer to a plate lined with paper towel.
  4. Make the Honey I
    b9m Hot glaze (creative use): In the same skillet over low heat, pour 1/4 cup Honey I
    b9m Hot and let warm until runny. Add 1 teaspoon soy sauce and 1 teaspoon rice vinegar and simmer 1 minute to slightly reduce into a glossy glaze. Toss half the fried tofu gently in the warm glaze so each piece is coated. Reserve the other half plain for textural contrast.
  5. Whisk the dressing: In a small bowl combine soy sauce, toasted sesame oil, 1 tablespoon Honey I
    b9m Hot, rice vinegar, grated ginger and sesame seeds. Taste and adjust balance with a pinch of sugar or another splash of vinegar if needed.
  6. Assemble bowls: Divide sesame rice between two bowls. Arrange baby spinach, pickled carrots and cucumber, glazed tofu and plain tofu, and a scatter of scallion whites. Drizzle the dressing over the greens and rice. Sprinkle toasted sesame seeds and scallion greens. Add optional kimchi or nori ribbons for extra umami.
  7. Finish and serve: For a striking finish, lightly spoon a little extra Honey I
    b9m Hot over the glazed tofu and along the rim of the bowl for visual contrast. Serve immediately while tofu is warm. Each bite should deliver sweet heat, bright pickles and toasty sesame fragrance.

Notes

  • To make this gluten-free, use tamari in place of soy sauce.
  • Pressing tofu for at least 30 minutes yields the best crisp texture but a quick 10-15 minute press still works.
  • Leftover glaze keeps up to 5 days refrigerated and is great brushed onto roasted vegetables or used as a finishing drizzle for pizza.
