Apricot Ginger Teriyaki Glazed Breakfast Grain Bowl
Bright, satisfying, and a little unexpected, this breakfast grain bowl uses Apricot Ginger Teriyaki Glaze to bring sweet savory balance to morning grains, roasted baby carrots, and a soft fried egg. The glaze is used as both a warm glaze for the vegetables and a finishing drizzle to tie the bowl together. Easy to assemble and visually inviting, this bowl is hearty enough to keep you fueled yet light and fresh.
Ingredients
- 1 cup farro or steel cut oats cooked and cooled slightly (see notes for alternatives)
- 8 small baby carrots, peeled
- 1 tablespoon olive oil
- Salt and freshly ground black pepper
- 2 large eggs
- 2 tablespoons Apricot Ginger Teriyaki Glaze (plus 2 teaspoons for finishing) (product link)
- 1/4 cup shelled edamame, steamed
- 2 tablespoons toasted sesame seeds
- 1 small scallion, thinly sliced
- 1/3 cup baby spinach
- 1 tablespoon rice vinegar
- 1 teaspoon soy sauce or tamari
- Optional: 1 tablespoon crushed roasted peanuts or cashews for crunch
Instructions
- Preheat the oven to 425°F (220°C). Line a small baking sheet with parchment.
- Toss the baby carrots with olive oil, a pinch of salt, and a few grinds of black pepper. Spread in a single layer on the prepared sheet.
- Roast the carrots for 12 minutes, then remove and brush each carrot with 2 tablespoons of Apricot Ginger Teriyaki Glaze. Return to the oven and roast an additional 6 to 8 minutes, until glazed and caramelized at the edges. Remove and keep warm.
- While the carrots roast, prepare the grain base: place cooked farro or oats in a shallow bowl. Stir in rice vinegar and soy sauce, taste and adjust seasoning. Scatter baby spinach over the grains so it wilts slightly from the residual heat.
- Steam the edamame until tender and set aside.
- Heat a small nonstick skillet over medium heat with a teaspoon of oil. Crack in the eggs and fry sunny side up until the whites are set but yolks remain runny, about 3 to 4 minutes. Season lightly with salt and pepper.
- Assemble two bowls: divide the vinegared grains between bowls, top with glazed roasted carrots, edamame, a fried egg, and a sprinkle of toasted sesame seeds and scallion. Add optional nuts for extra texture.
- Finish each bowl with a thin drizzle (about 1 teaspoon) of Apricot Ginger Teriyaki Glaze across the egg and vegetables for a glossy, aromatic touch. Break the yolk and stir gently before eating to coat the grains and veggies in the sweet savory sauce.
Notes
- Grain alternatives: use quinoa, brown rice, or steel cut oats (for a porridge style) to change the texture. If using oats, cook them slightly firmer so they hold toppings.
- Make it vegetarian/vegan: swap the fried egg for pan seared tofu seasoned with a splash of soy, then finish with the glaze.
- Advance prep: roast a larger batch of glazed carrots and store refrigerated for up to 4 days. Reheat gently before serving.
Creative Use of the Product
In this recipe the Apricot Ginger Teriyaki Glaze serves a dual role: it caramelizes on roasted vegetables when applied before finishing roasting and then acts as a bright finishing drizzle that melds the warm, savory grains with fresh greens and egg yolk. Try warming 1 tablespoon of the glaze with 1 teaspoon of extra rice vinegar and a pinch of chili flakes to create a tangy dipping sauce for additional sides.
