
Apricot Habanero Glazed Goat Cheese & Fig Tartines
Bright, slightly spicy, and perfect for a relaxed brunch or an elegant wine-and-cheese night. This open-faced tartine uses Coo Moo Apricot Habanero jam both as a glaze and a finishing drizzle to balance creamy tangy goat cheese and sweet roasted figs. The result is visually stunning and full of layered flavors.
Ingredients
- 1 baguette, sliced on the diagonal into 12 slices (about 1/2-inch thick)
- 3 tablespoons extra-virgin olive oil, divided
- 8 ounces fresh goat cheese, room temperature
- 2 tablespoons honey
- 1 teaspoon lemon zest
- 1/4 teaspoon flaky sea salt, plus more for finishing
- 8 to 10 fresh mission figs (or 6 large), halved lengthwise

- 1 tablespoon balsamic vinegar
- 2 teaspoons unsalted butter, softened
- 1/3 cup toasted sliced almonds or pistachios, roughly chopped
- Fresh microgreens or baby arugula for garnish (about 1 cup)
- Freshly ground black pepper to taste
Instructions
- Preheat the oven to 425F (220C). Line a baking sheet with parchment paper.
- Arrange the fig halves, cut side up, on one side of the prepared baking sheet. Brush each fig lightly with 1 teaspoon of olive oil. On the other side of the sheet place the baguette slices. Brush each slice with the remaining olive oil mixed with the softened butter. Toast in the oven for 8 to 10 minutes, until the bread edges are golden and the figs are slightly caramelized. Remove and set aside.
- While the bread and figs roast, make the whipped goat cheese. In a medium bowl combine the goat cheese, honey, lemon zest, and 1/4 teaspoon flaky sea salt. Whip with a fork or small whisk until smooth and spreadable. Taste and adjust honey or salt if needed.
- In a small saucepan over low heat, combine the Coo Moo Apricot Habanero jam and balsamic vinegar. Stir until warm and slightly thinned, about 2 to 3 minutes. Remove from heat. This creates a glossy glaze that will both sweeten and add bright heat. Reserve 2 tablespoons of glaze for finishing drizzle.
- To assemble, spread about 1 to 1 1/2 tablespoons of the whipped goat cheese on each toasted baguette slice. Place a roasted fig half or two on top of each toast, pressing gently to adhere.
- Spoon 1/2 to 1 teaspoon of the warmed Apricot Habanero-balsamic glaze over each fig. Sprinkle with the toasted chopped nuts and a few microgreens or a small handful of baby arugula on each tartine for color and freshness.
- Finish with a light pinch of flaky sea salt, a few turns of freshly ground black pepper, and a very thin drizzle of the reserved 2 tablespoons of Apricot Habanero glaze for a glossy, spicy-sweet highlight.
- Serve immediately while the toasts are warm. These tartines pair beautifully with a crisp white wine or a sparkling water with lemon.
Notes
- Creative use of product: The Apricot Habanero serves two roles here. It becomes a quick warm glaze when mixed with a splash of balsamic for roasting and finishing, and a cool drizzle at the end for contrast. This makes the jam both an integrated cooking ingredient and a finishing condiment.
- Make ahead: Whip the goat cheese and toast the baguette slices up to 2 hours ahead. Warm the jam glaze just before assembling.
- Variations: Swap figs for roasted peaches or halved grapes for a different fruit profile. For a vegan version use a plant-based spreadable cheese and maple syrup in place of honey.
