Ingredients

Corn Fritters

  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 2 large eggs
  • 1/3 cup milk
  • 1/4 cup sour cream or plain Greek yogurt
  • 1 cup corn kernels (fresh, frozen, or canned and drained)
  • 1/3 cup chopped Coogirl Candy jalapeños, drained well
  • 1/4 cup finely chopped green onion
  • 1/2 cup shredded cheddar or pepper Jack cheese
  • Vegetable oil, for shallow frying

Sweet Heat Dipping Sauce

  • 1/2 cup sour cream or plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons Coogirl Candy syrup (from the jar)
  • 1 teaspoon lime juice
  • Pinch of kosher salt

To Finish

  • Extra chopped Coogirl Candy jalapeños, optional
  • Chopped fresh cilantro or green onion

Instructions

  1. Make the dipping sauce

    1. In a small bowl stir together sour cream, mayonnaise, Coogirl Candy syrup, lime juice, and a pinch of salt until smooth.
    2. Taste and adjust with a little more syrup or lime to balance sweet and tangy flavors.
    3. Refrigerate while you prepare the fritters so the flavors meld.
  2. Prepare the fritter batter

    1. In a large bowl whisk together flour, baking powder, salt, black pepper, and smoked paprika.
    2. In a separate bowl whisk the eggs, milk, and sour cream until smooth.
