
Coogirl Candy BBQ Chicken Pizza

This easy skillet or sheet pan pizza uses Coogirl Candy for a sweet spicy twist on classic BBQ chicken pizza. The syrup is whisked into a quick barbecue style sauce for the base and chopped candied jalapeños are scattered on top for pockets of heat and crunch.
Ingredients
Pizza Base
- 1 pound pizza dough, at room temperature
- 1 tablespoon olive oil, plus extra for the pan
Coogirl Candy BBQ Sauce
- 1/3 cup Coogirl Candy syrup (from the jar)
- 1/3 cup ketchup
- 1 tablespoon apple cider vinegar
- 1 teaspoon soy sauce
- 1 teaspoon Dijon mustard
- 1/4 teaspoon garlic powder
Toppings
- 1 cup cooked chicken breast, shredded or diced
- 1/3 cup Coogirl Candy jalapeños, chopped and well drained
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup shredded sharp cheddar cheese
- 1/4 small red onion, very thinly sliced
To Finish
- 2 tablespoons chopped fresh cilantro
- Lime wedges, optional
Instructions

Preheat oven and prepare pan
- Preheat oven to 475°F.
- Lightly oil a 12 inch cast iron skillet or a large pizza pan. If using a sheet pan, line with parchment and brush with olive oil.

Make Coogirl Candy BBQ sauce
- In a small saucepan combine Coogirl Candy syrup, ketchup, apple cider vinegar, soy sauce, Dijon mustard, and garlic powder.
- Cook over low heat, stirring, for 3 to 4 minutes until the sauce is smooth and slightly thickened.
- Remove from heat and let cool slightly.

Prepare the dough
- On a lightly floured surface stretch or roll pizza dough into a circle or rectangle about 12 inches across.
- Transfer dough to the prepared skillet or pan.
- Brush the edges with 1 tablespoon olive oil.

Assemble the pizza
- Spread a generous layer of Coogirl Candy BBQ sauce over the dough, leaving a small border for the crust. You may have a little sauce left depending on how saucy you like your pizza.
- In a bowl toss the cooked chicken with 2 tablespoons of the remaining warm sauce so it is lightly coated.
- Sprinkle half the mozzarella and half the cheddar over the sauce.
- Scatter the sauced chicken evenly across the pizza.
- Sprinkle chopped Coogirl Candy jalapeños and sliced red onion over the top.
- Finish with the remaining mozzarella and cheddar.

Bake
- Bake at 475°F for 12 to 15 minutes until the crust is golden and the cheese is melted and bubbling with a few browned spots.
- If baking in a skillet, you can place the skillet on a preheated baking stone or the lowest rack for extra crispness.

Finish and serve
- Remove pizza from the oven and let rest 3 to 5 minutes.
- Sprinkle with chopped cilantro.
- If desired, drizzle a teaspoon or two of extra Coogirl Candy syrup over the top in a thin zigzag for added shine and sweet heat.
- Slice and serve with lime wedges and the jar of Coogirl Candy on the table so everyone can add extra jalapeños.
