- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 2 large eggs
- 1/3 cup milk
- 1/4 cup sour cream or plain Greek yogurt
- 1 cup corn kernels (fresh, frozen, or canned and drained)
- 1/3 cup chopped Coogirl Candy jalapeños, drained well
- 1/4 cup finely chopped green onion
- 1/2 cup shredded cheddar or pepper Jack cheese
- Vegetable oil, for shallow frying
Sweet Heat Dipping Sauce
- 1/2 cup sour cream or plain Greek yogurt
- 2 tablespoons mayonnaise
- 2 tablespoons Coogirl Candy syrup (from the jar)
- 1 teaspoon lime juice
- Pinch of kosher salt
To Finish
- Extra chopped Coogirl Candy jalapeños, optional
- Chopped fresh cilantro or green onion
Instructions
-
Make the dipping sauce
- In a small bowl stir together sour cream, mayonnaise, Coogirl Candy syrup, lime juice, and a pinch of salt until smooth.
- Taste and adjust with a little more syrup or lime to balance sweet and tangy flavors.
- Refrigerate while you prepare the fritters so the flavors meld.
-
Prepare the fritter batter
- In a large bowl whisk together flour, baking powder, salt, black pepper, and smoked paprika.
- In a separate bowl whisk the eggs, milk, and sour cream until smooth.
- Pour the wet mixture into the dry ingredients and gently stir until just combined. The batter will be thick.
- Fold in corn kernels, chopped Coogirl Candy jalapeños, green onion, and shredded cheese until evenly distributed.
- Let the batter rest for 5 minutes while you heat the oil.
-
Heat the oil
- Pour about 1/4 inch of vegetable oil into a large skillet.
- Heat over medium heat until the oil shimmers and a small drop of batter sizzles immediately when added.
-
Fry the fritters
- Working in batches, drop heaping tablespoonfuls of batter into the hot oil, flattening slightly with the back of the spoon to form small patties.
- Fry 2 to 3 minutes per side until deep golden brown and cooked through in the center.
- Transfer cooked fritters to a paper towel lined plate or a wire rack set over a baking sheet to drain.
- Repeat with remaining batter, adjusting the heat as needed so the fritters brown evenly without burning.
-
Finish and serve
- Arrange warm fritters on a serving platter.
- Sprinkle with chopped cilantro or green onion and a few extra bits of chopped Coogirl Candy jalapeños if you like more heat.
- Serve with the chilled Sweet Heat Dipping Sauce and place the jar of Coogirl Candy on the table so guests can add extra syrup or jalapeños.
Tips
- Keep fritters warm in a 250°F oven on a wire rack while you cook the rest.
- If the batter becomes too thick as it sits, stir in a splash of milk to loosen.
- Leftover fritters crisp up nicely in a hot skillet with a touch of oil or in an air fryer. Serve with extra Coogirl Candy syrup drizzled on top.
