
Coogirl Candy Glazed Salmon Bites

These bite sized glazed salmon pieces are bright, slightly sweet, and have a gentle jalapeño heat from Coogirl Candy. The jar product is used two ways: chopped jalapeños are folded into a citrus herb crust and the syrup is reduced into a glossy glaze that finishes the bites.
Ingredients
Salmon Bites
- 1 1/2 pounds salmon fillet, skin removed, cut into 1 to 1 1/2 inch cubes
- 1/2 cup panko breadcrumbs
- 2 tablespoons finely chopped Coogirl Candy jalapeños, drained well
- 1 tablespoon finely grated lemon zest
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 large egg, lightly beaten
- 2 tablespoons olive oil, plus more for the pan
Coogirl Candy Glaze
- 1/3 cup Coogirl Candy syrup from the jar
- 1 tablespoon soy sauce
- 1 tablespoon fresh lemon juice
- 1 teaspoon rice vinegar
- 1/2 teaspoon grated fresh ginger
To Serve
- Fresh parsley leaves or microgreens
- Thin lemon slices or lemon wedges
- Extra chopped Coogirl Candy jalapeños for garnish, optional
- Toothpicks or small skewers for serving
Instructions

Prepare the salmon
- Pat the salmon cubes dry with paper towels and place in a medium bowl.
- Season gently with 1/4 teaspoon salt and 1/8 teaspoon pepper and toss to coat.

Make the crust mixture
- In a shallow bowl combine panko, chopped Coogirl Candy jalapeños, lemon zest, chopped parsley, remaining 1/4 teaspoon salt, and remaining 1/8 teaspoon pepper.

Coat the salmon bites
- Set up an assembly station: beaten egg in one shallow bowl and the panko mixture in another.
- Working in batches, dip each salmon cube into the egg, letting the excess drip off, then press into the panko mixture so the pieces are evenly coated. Place coated pieces on a tray.

Pan sear the salmon
- Heat a large nonstick skillet over medium high heat and add 2 tablespoons olive oil, swirling to coat.
- Place the coated salmon bites in the skillet in a single layer, do not crowd the pan. Cook for 2 to 3 minutes per side until golden and crisp and the center is just cooked. Work in batches if needed and keep finished pieces on a warm plate.

Make the Coogirl Candy glaze
- While the salmon cooks, combine Coogirl Candy syrup, soy sauce, lemon juice, rice vinegar, and grated ginger in a small saucepan.
- Bring to a gentle simmer over medium low heat and cook for 2 to 3 minutes, stirring, until the glaze is slightly thickened and glossy.
- Remove from heat and keep warm.

Glaze and finish
- Return the cooked salmon bites to the skillet briefly over low heat.
- Pour the warm Coogirl Candy glaze over the bites and gently toss or spoon the glaze so each piece is coated and shiny, about 30 to 60 seconds.
- Remove from heat to avoid overcooking the salmon.

- Thread each glazed salmon bite with a toothpick or small skewer and arrange on a serving platter.
- Garnish with fresh parsley or microgreens, a thin lemon slice, and extra chopped Coogirl Candy jalapeños if you want more heat and texture.
- Serve warm as an appetizer or as a small plate with a simple green salad and steamed rice.
Tips
- Press the panko onto the salmon gently so the crust stays intact during cooking.
- If you prefer oven cooking, arrange coated salmon on a parchment lined sheet, spray lightly with oil, and bake at 425°F for 8 to 10 minutes, turning once.
