Coogirl Candy Spicy Pineapple Pork Tacos
These tacos balance tangy charred pineapple, smoky pork, and a sweet jalapeño finish from Coogirl Candy. The jam is used two ways: warmed into a glaze that gives the hot pork a glossy finish and stirred into the cool pineapple salsa dressing so the sweet‑spicy flavor appears across the whole taco.
Ingredients
- 1 lb pork shoulder or pork loin, thinly sliced or cut into small strips
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 8 small corn or flour tortillas, warmed
- Coogirl glaze
- 1/3 cup Coogirl Candy
- 1 tsp lime juice
- 1 tsp soy sauce
- Charred pineapple salsa
- 1 cup fresh pineapple, diced and charred
- 1/4 cup red bell pepper, finely diced
- 2 tbsp red onion, finely diced
- 2 tbsp chopped cilantro
- 1 tbsp lime juice
- 2 tsp Coogirl Candy (stirred into dressing)
- Salt and pepper to taste

- 1 avocado, sliced
- Extra cilantro and lime wedges
Instructions
- Make the charred pineapple: Heat a grill pan or skillet over high heat. Add pineapple cubes and char until golden, about 2 to 3 minutes per side. Remove and let cool slightly.
- Prepare the salsa: In a bowl combine charred pineapple, red bell pepper, red onion and chopped cilantro. Whisk together lime juice and 2 tsp Coogirl Candy until smooth and toss with the salsa. Season with salt and pepper and chill while you cook the pork.
- Season the pork: In a bowl toss pork strips with ground cumin, smoked paprika, salt and pepper.
- Make the glaze: In a small saucepan warm 1/3 cup Coogirl Candy with 1 tsp lime juice and 1 tsp soy sauce over low heat until loosened and brushable, about 1 minute. Keep warm.
- Cook the pork: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add pork in a single layer and sear 2 to 3 minutes per side until browned and cooked through. In the last minute brush pork with the warm Coogirl glaze so pieces become glossy. Remove from heat.
- Assemble tacos: Place a few pieces of glazed pork in each warmed tortilla. Top with a spoonful of charred pineapple salsa, avocado slices and extra cilantro. Serve with lime wedges and extra Coogirl Candy if desired.
- Serve immediately: These are best when the pork is warm and glossy and the salsa is cool and bright.
Notes
- Creative use of product: Coogirl Candy is warmed into a glaze for the hot pork and stirred into the chilled pineapple salsa so the jam’s jalapeño sweetness appears in both hot and cold components.
- Heat control: The jam contains jalapeño pieces. Use less in the salsa or strain small pieces out for milder heat.
- Make ahead: Prepare salsa a few hours ahead and refrigerate; rewarm glaze before finishing pork.
